Log in to your ESPN account in a computer or mobile browser.
Hover over or tap your profile picture (top right), then select Account under Manage My Account.
Select Manage Subscription, then your subscription under Plans & Billing.
Select the plan you want to cancel, select Cancel and confirm.

Paying through Apple? Then Apple bills you. Cancel in Settings → your name → Subscriptions instead.

Billed through Google, Roku, Amazon or a TV provider? Manage it with them; ESPN can't cancel those plans.
