Go to paramountplus.com in a web browser and sign in.
Select your profile, then Account.
Select Cancel Subscription.
Follow the prompts to confirm. You keep watching until the end of the billing period you've paid for.

Paying through Apple? Then Apple bills you. Cancel in Settings → your name → Subscriptions instead.

Subscribed through Google Play, Amazon, Roku or Prime Video Channels? Cancel there; the Paramount+ website can't cancel those.
